- 450grams Woolworths frozen shoestring fries
- 40grams parmesan, finely grated
- 1tablespoons extra virgin olive oil
- 700grams Woolworths thawed imported freshwater basa fillets, thawed
- 20grams unsalted butter, chopped
- 1 brown onion, finely chopped
- 2 sticks celery, sliced
- 1 clove garlic, crushed
- 1/4 cup plain flour
- 1 1/2 cups Woolworths milk
- 1tablespoons Dijon mustard
- 1 cup Woolworths frozen Australian baby peas, blanched
Description
A perfect fusion of two classic British dishes, these easy-to-make fish and chip pies deliver satisfying crunch and delicious flavour in every bite.

Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Grease 4 x 1 1/2 cup-capacity ovenproof dishes. Line a baking tray with baking paper. Spread fries over prepared tray. Bake for 20 minutes or until golden. Add half of the parmesan and toss.

Meanwhile, heat oil in a large deep-frying pan over medium-high heat. Pat fish dry with paper towel. Add to pan and cook for 2 minutes each side or until browned and almost cooked. Transfer to a plate. Coarsely flake. Add butter to pan and heat until foaming. Add onion and celery and cook, stirring occasionally, until soft. Stir in garlic and cook for 30 seconds or until fragrant. Stir in flour and cook for 1 minute. Gradually stir in milk and 1/2 cup water. Bring to boil, stirring, for 2 minutes or until mixture thickens and coats the back of a spoon. Stir in mustard until combined. Stir in fish and peas.

Spoon fish mixture into prepared dishes. Arrange chips on top of fish. Sprinkle with remaining parmesan. Bake for 5 minutes or until golden brown. Serve.
