  • 1.20kilograms chickpeas, rinsed, drained
  • 4 cloves garlic
  • 3/4 cup tahini
  • 3 1/2teaspoons ground cumin
  • 2 lemons, juiced
  • 1tablespoons pickled onion
  • 2 radishes, thinly sliced
  • 1/2teaspoons sweet paprika
  • 2tablespoons extra virgin olive oil
  • 1/4 bunch continental parsley, finely chopped

The hummus can be prepared a day ahead and stored in the fridge until ready to garnish and serve.

Method

Step 1 of 3

Add 1/4 cup chickpeas to a large frying pan on medium heat. Stir and toast for 5 minutes until crispy and dry. Set aside.

Step 2 of 3

Add remaining chickpeas, garlic, tahini, 3 tsp cumin, lemon juice and 1/4 cup hot water to a small blender and process until smooth. Spread onto a large, shallow serving bowl.

Step 3 of 3

Garnish with pickled onion, radish, toasted chickpeas, paprika, oil, parsley and remaining cumin. Serve.
