Thai-style dressing
- 1/4 cup rice wine vinegar
- 1/3 cup fish sauce
- 1tablespoons brown sugar
- 2 limes, juiced
- 3 bird's eye chillies, finely chopped
- 4 lime leaves, shredded
- 450grams firm tofu, drained, cut into 3cm pieces
- 1/2 cup rice flour
- 1/2 cup vegetable oil
- 250grams cherry tomatoes, quartered
- 1/2 cup Thai basil leaves
- 1/2 cup coriander, chopped
- 1/4 cup unsalted roasted peanuts, chopped
Description
A delectable combination of textures and flavours, this crispy tofu with a fiery Thai-style dressing will wow at summer parties.

Swap tip:If Thai basil is unavailable, you can use regular basil or coriander leaves instead.
Method
Step 1 of 3
To make dressing, combine ingredients in a small bowl.
Step 2 of 3
Coat tofu in flour. Heat oil in a large deep-frying pan over medium-high heat. Cook tofu, in batches, for 2 minutes each side or until golden. Transfer to a plate.
Step 3 of 3
Drizzle tofu with half of the dressing. Top with tomato. Sprinkle with basil, coriander and peanuts. Serve with remaining dressing.
