- 2tablespoons extra virgin olive oil
- 200grams Woolworths Danish-style feta
- 1 red onion, thinly sliced
- 2 cloves garlic
- 250grams mini Roma tomatoes
- 250grams truss cocktail tomatoes
- 2tablespoons Woolworths balsamic glaze
- 1/2 cup basil leaves
- 1/2 baguette, sliced, toasted
Description
A simple yet extraordinary camping appetiser where feta is transformed into a creamy, flavourful dip when cooked over the camp fire. Perfect for sharing with family and friends.
Method
Step 1 of 3
Heat half of the oil in a large cast iron frying pan over medium-high heat. Add feta and cook for 1 minute each side or until browned. Transfer to a plate.
Step 2 of 3
Add onion and garlic to pan and cook, stirring, for 2 minutes or until onion softens. Add tomatoes and cook, stirring, for 2-3 minutes or until they begin to colour. Return feta to pan. Cover with a tight-fitting lid. Cook for 2-3 minutes or until tomatoes soften.
Step 3 of 3
Drizzle with glaze and remaining oil. Sprinkle with basil. Season with freshly ground black pepper. Serve with toast.
