  • 3/4 cup wholemeal self-raising flour
  • 1/2teaspoons cinnamon
  • 90milliliter prepared NAN OPTIpro 3 Toddler Milk Drink
  • 1 egg, lightly beaten
  • 2tablespoons extra virgin olive oil
  • 1 small ripe banana, mashed
  • 1/4 cup drained crushed pineapple
  • 1 cup Greek-style natural yoghurt

Description

These scrumptious banana and pineapple muffins made with NAN OPTIpro 3 Toddler Milk Drink are the perfect little bites for toddlers on the go!

Method

Step 1 of 3

Preheat oven to 190°C/170°C fan-forced. Grease a 12-hole (1 tbs/20ml) mini muffin tray.

Step 2 of 3

Combine flour and cinnamon in a medium bowl. Make a well at centre. Whisk milk drink, egg and oil in a jug. Add to flour mixture with banana, then fold until just combined.

Step 3 of 3

Divide mixture among prepared holes. Top with pineapple. Bake for 15 minutes or until a skewer inserted at centre comes out clean. Serve.
