- 25grams essentials unsalted butter
- 80grams Csr Unrefined Coconut Sugar
- 1 Woolworths 12 extra large free range eggs
- 190grams Essentials Plain Flour
- 2teaspoons Woolworths cinnamon ground
- 2teaspoons Woolworths ginger ground
- 1teaspoons Mckenzie's Bi Carb Soda
- 1/4teaspoons Mckenzie's Baking Powder
- 3 drops Queen black food colour gel
- 1 pinch essentials table salt
- 100grams Cadbury Dream White Chocolate
- 250grams Woolworths cream cheese
- 3 drops Queen green food colour
- 50grams M&M’S® Spooky Mix
Method
Step 1 of 11
Preheat oven to 160°C (fan forced). Line two baking trays with baking paper.
Step 2 of 11
In a small saucepan, melt the butter over a low heat then add the sugar and stir until the sugar has melted. Pour into a large bowl and set aside to cool for 10 minutes.

Add 1 egg and black gel food colouring to butter mixture, stirring to combine. Sift flour, ginger, cinnamon, baking powder, bicarb soda and salt over the butter mixture and mix to form a dough.

Turn out onto a lightly floured surface and knead until smooth. Shape into a disc, wrap in cling wrap and allow to rest in the fridge for 1 hour.

Roll dough between two sheets of baking paper until 5mm thick. Cut out 12x8cm round and 12x6cm round cookies from the dough and place on prepared trays.

Bake for 6-8 minutes. Allow to cool on trays for 5 minutes before transferring to a wire rack to cool completely.

To prepare the frosting, melt the white chocolate in the microwave in short 20-30 sec bursts, stirring in-between.

Add cream cheese to the bowl of a stand mixer and whip until soft and smooth.

Drizzle in melted white chocolate and add a few drops of green gel food colouring, then whip with the mixer until combined. Transfer to a piping bag fitted with a 1M piping tip.

To build the witches hats, place an 8cm cookie down on your bench and top with a circle of green frosting. Stack a 6cm cookie on top and then frost the top of the cookie with a frosting swirl.

Place an orange M&M’S® on the front for the buckle and then a circle of brown M&M’S® around the rim for the strap.
