Method

Step 1 of 2

Heat oil in a large frying pan over medium heat. Add onion, carrot, celery, garlic and bacon and cook for 10 minutes or until vegetables have softened. Add mince and seasoning and cook, stirring with a wooden spoon to break up mince, for 10 minutes or until browned. Stir in tomato paste, passata and stock. Bring to the boil, reduce heat to low and simmer for 30 minutes or until sauce thickens. Add basil and season.

Serve with pasta (or use to fill cannelloni) and parmesan. Garnish with parsley, if using.
