Raspberry sugar syrup
- 125grams raspberries
- 1 cup caster sugar
- 300milliliter Aperol Aperitivo
- 300milliliter prosecco
- 200milliliter soda water, chilled
- 2 small oranges, sliced into rounds
- 125grams raspberries
- 1/2 bunch mint, sprigs picked
- ice cubes (to serve)
Description
Put a twist on the classic Aperol spritz with this delicious fruity cocktail. It's the perfect beverage for summery al fresco dining.
Method
Step 1 of 2
To make the raspberry sugar syrup, place raspberries, sugar and 1 cup cold water in a small saucepan and bring to the boil over medium-high heat. Reduce heat to medium-low and simmer, uncovered, for 15 minutes to allow flavours to infuse. Strain syrup through a sieve, pressing down with the back of a spoon into a heatproof jug. Refrigerate for 2 hours or until chilled.

To serve, combine Aperol, prosecco and soda in a bottle or jug. Place ice cubes, an orange slice, raspberries and mint into each glass. Pour 30ml raspberry sugar syrup into each glass, top up with Aperol mixture and serve.
