  • 3 large eggs
  • 60grams spinach
  • 2teaspoons butter
  • 1/2 medium avocado, sliced
  • 100grams natural oak smoked salmon
  • 1 1/4 medium lemon
  • 1 pinch salt
  • 1 pinch cracked black pepper

Description

This bright green omelette is as healthy as it gets for breakfast.

Method

Step 1 of 4

Add the eggs to a large bowl, season and add the spinach. Blitz to a bright green, smooth mix with a handheld blender.

Step 2 of 4

Heat a teaspoon of butter in a large frying pan on medium heat and swirl to coat the base of the pan. Pour in a quarter of the egg mix and swirl again for a thin coating.

Step 3 of 4

Cook for two minutes until almost set, then lay the smoked salmon and avocado slices over one half, squeeze lemon over the top and gently fold over.

Step 4 of 4

Leave to cook for one more minute and serve.
