Description

This spiced roasted pumpkin makes a delicious vegetarian entree or side dish with creamy feta and sweet pomegranate.

Method

Step 1 of 2

Pre-heat the oven to 200°C. Add the pumpkin wedges to a large roasting tin, drizzle over the oil, add the garam masala and toss well to coat. Roast for 30 minutes.

Step 2 of 2

Divide the pumpkin wedges between 4 plates, scatter with pumpkin seeds, feta and pomegranate seeds, drizzle over pomegranate molasses and serve.
