Spiced Blueberry Chutney

- 3 bay leaves
- 1 cinnamon stick
- 1/2 brown onion, thinly sliced
- 1 cup blueberries
- 1teaspoons olive oil
- crackers, cheddar, prosciutto and pitted green olives (to serve)
- 1/4 cup balsamic vinegar
- 2tablespoons brown sugar
Method
Step 1 of 2
Place oil in a small saucepan over medium heat. Add onion, reduce heat to low and cook for 2 minutes or until onion begins to turn translucent. Add sugar and cook, stirring occasionally, for 5 minutes or until caramelised.
Step 2 of 2
Increase heat to medium and add blueberries, vinegar, water, cinnamon, bay leaves and a pinch of salt. Cook for 15 minutes or until reduced to a jam-like consistency. Remove bay leaves and cinnamon, transfer to a sterilised jar and seal. Serve with crackers, cheese, prociutto and olives.
