  • 250grams wholemeal spaghetti
  • 1/2 bunch parsley (chopped)
  • 250grams cherry tomatoes
  • 420grams lentils
  • 200grams extra lean beef mince
  • 1/2tablespoons olive oil
  • 4 clove garlic (crushed)
  • 100grams parmesan
  • 2 diced Italian tomatoes
  • 2tablespoons mixed grain breadcrumbs

Method

Step 1 of 4

Preheat oven to 180°C. Line a baking tray with baking paper and cook pasta as per packet instructions.

Step 2 of 4

Place lentils, beef mince, half the garlic cloves, half of the parsley, breadcrumbs and pepper to taste in a food processor and blitz until roughly combined.

Step 3 of 4

Shape lentil and beef mixture into meatballs and place on prepared tray. Bake for 15 minutes or until cooked through.

Step 4 of 4

Meanwhile, heat olive oil in a medium frying pan over medium heat. Sauté remaining garlic for 1-2 minutes, add Italian tomatoes and cook for 2-3 minutes or until reduced. Stir through cherry tomatoes, meatballs, spaghetti and remaining parsley and season with pepper to taste. Divide among serving bowls and top with parmesan to serve.
