- 400grams smoked cod, boneless and skinless fillets
- 600grams baby potatoes
- 2tablespoons olive oil
- 1 medium onion, peeled and finely chopped
- 2 medium capsicums, red and green, cored and sliced
- 3 medium tomatoes, diced
- 2 cloves garlic
- 2tablespoons curry powder
- 3tablespoons coriander, fresh, chopped

Description
This simple smoked cod hash is a great way to get your veggies in at breakfast or brunch.
Method
Step 1 of 4
Pre-heat the oven to 180°C. Place the potatoes in large saucepan of water, bring to the boil and cook for 15 minutes or until tender. Drain and allow to cool slightly and slice in half.
Step 2 of 4
Place the smoked cod on a greased baking tray, brush with oil and cook for 10 minutes.
Step 3 of 4
Heat the oil in a large non-stick pan on medium heat and cook the onion, potatoes and capsicums for 5 minutes. Stir in the garlic, tomatoes and curry powder and cook for 2 minutes.
Step 4 of 4
Flake in the smoked cod and cook for 2 minutes. Serve with chopped coriander on top.
