Smashed crispy thyme potatoes

- 1kilograms potatoes, chopped
- 1/4 cup Cobram Estate Garlic Infused Extra Virgin Olive Oil
- 1/2 punnet thyme leaves
- 1 lemon
- 100grams Danish-style, crumbled
Description
Crispy on the outside, fluffy on the inside, and bursting with the fresh, herby flavour of thyme, these smashed potatoes make a delectable summer side dish.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Line a large tray with baking paper. Cook potatoes in a large saucepan of boiling water for 10 minutes or until just tender. Drain well. Return potatoes to saucepan.
Step 2 of 3
Add 2 tbs oil and a quarter of the thyme. Cover with a lid and shake to roughen edges slightly. Place potatoes on prepared tray. Drizzle with remaining oil. Roast for 25-30 minutes or until golden and tender.
Step 3 of 3
Zest lemon, then cut into wedges. Top potatoes with feta, zest and remaining thyme. Serve with lemon.
