  • 1kilograms Woolworths COOK slow cooked pork knuckle
  • 1teaspoons extra virgin olive oil
  • 1teaspoons sea salt flakes
  • 500grams Woolworths chunky steakhouse chips
  • 300grams Woolworths fine cut coleslaw
  • 1/4 cup aioli
  • 4 brioche buns, split, toasted
  • 1/4 cup bread and butter pickles

Description

This burger recipe combines succulent slow-cooked pork with crunchy coleslaw, creamy aioli and tangy pickles. Serve with chips for a tasty family dinner.

Method

Step 1 of 4

Preheat oven to 240°C/220°C fan-forced. Line a baking tray with baking paper. Remove pork from packaging and pat rind dry with a paper towel. Rub oil into rind and sprinkle with salt. Place pork in a large baking dish and bake for 1 hour or until pork is heated through and rind is crisp.

Meanwhile, place chips on tray and bake during the last 20 minutes of pork cooking time.

Place coleslaw and aioli in a medium bowl and toss to combine. Season.

Step 4 of 4

Transfer pork to a board. Remove crackling and thinly slice. Using 2 forks, roughly shred pork, discarding bones and excess fat. Top bun bases with most of the slaw and pork, crackling and pickles. Sandwich with bun tops. Serve with chips, remaining slaw and pork.
