- 2tablespoons cornflour
- 1tablespoons sesame oil
- 1/3 cup hoisin sauce
- 2tablespoons coriander leaves (to serve)
- 2 spring onions, finely chopped
- 200grams hokkien thin noodles
- 5milliliter virgin olive oil spray
- 1/4 cup rice vinegar
- 500grams pork mince with san choy bau seasoning
- 1tablespoons soy sauce
- 2 bunch lettuce
- 1/2 can water chestnuts, drained, finely chopped

Method
Step 1 of 4
Line a baking tray with baking paper. Combine mince, seasoning sachet, chestnut, spring onion, cornflour and 5 tbs water in a bowl. With clean hands, roll tablespoons of mixture into balls and place on prepared tray. Cover with plastic wrap and refrigerate for 20 minutes.

Meanwhile, combine hoisin sauce, vinegar, soy and sesame oil. Set aside. Soak noodles in boiling water for 3 minutes or until softened. Drain well. Trim lettuce leaves to form small cups. Keep chilled.
Step 3 of 4
Preheat oven to 220°C. Spray meatballs with oil. Bake for 20 minutes or until golden and cooked through.
Step 4 of 4
To serve, guests can fill lettuce cups with noodles, meatballs, sauce and coriander leaves.
