  • 2packets Woolworths rocky road mallows biscuits
  • 1 block white chocolate
  • 1packets raspberry lollies
  • 1packets peppermint leaves lollies (or spearmint)

Description

Quick, easy, few ingredients, for the kids to help with. Delicious.
Instruction tip
You can substitute any of the ingredients for ones you prefer. Snake lollies work well for those that don't fancy the spearmint flavour, you get a range of colours so mix it up a bit. It's up to you. Experiment, taste test.

Method

Step 1 of 5

First step is grab your biscuits out, line them up on a baking tray, I suggest baking paper under them incase you get a bit of dripping chocolate, just makes it easy to remove and no hassle to clean.

Get a pot of water on the stove, start bringing it to the boil. While this is happening, break your white chocolate into smaller pieces. You can even use white chocolate bits or melts which ever is your preference works just fine. Also now is great time to cut your lollies into smaller bits. The spearmint leaves I find cut in half are a good size and stick to the top well. Raspberry lollies can also be cut smaller too, or put on whole.

Get your white chocolate into a heatproof bowl and place on top of your saucepan of water, stirring and keeping even consistency as it is melting. Start with half the block of chocolate, see if that will be enough, but if in doubt, melt it all.

Step 4 of 5

Remove the chocolate in your heatproof bowl, taking care not to burn yourself. Grab your pre cut / prepared lollies handy, your tray of biscuits. Simply dip 1 biscuit at a time, into the white chocolate. Place your lollies on the top, then place biscuit, back on the tray.

Step 5 of 5

Repeat step 4 until you have covered all the biscuits you laid on your tray. Then pop them in the fridge for just a little while to help the chocolate set and keep your lollies in place. Can be kept in fridge but I remove them and store in a cool dry place until time to whip them out and share.
