  • 250milliliter almond milk
  • 3tablespoons coconut sugar
  • 1teaspoons ground cinnamon
  • 1/2teaspoons ground nutmeg
  • 1/4teaspoons ground cardamom

Description

A quick and easy coconut rice pudding that's baked in the oven instead of having to keep a constant eye out using the stovetop, sweetened with natural coconut sugar and warm and toasty spices.

Method

Step 1 of 3

Preheat the oven to 180°C/160°C fan-forced. Stir all the ingredients together in a baking dish wrapping the dish in foil before adding it to the oven.

Step 2 of 3

Bake for 50 minutes giving it a stir halfway through cooking. Remove the foil for the last 10 minutes letting the top caramelise.

Step 3 of 3

Scoop into warm bowls adding on any of your favourite toppings.
