Description
Scrumptiously moist and a cinch to whip up - even the kids can do it. The smells as it's baking is divine! Serve as is or with butter.

Method
Step 1 of 5
Pre-heat oven to 180°C. Line a loaf tin with baking paper.
Step 2 of 5
Place the prunes, bicarb soda and boiling water in a bowl and stir to combine.
Set aside to thicken and cool slightly.
Step 3 of 5
In a separate bowl, mix together butter sugar and egg until creamy.
Step 4 of 5
Add the prune mixture to the butter mixture and stir to combine.
Add the flour and baking powder and mix well.
Step 5 of 5
Pour into loaf tin and bake for 30-40 minutes or until cooked when tested with a skewer.
