Description
Varenyky are traditional Ukrainian dumplings and are often filled with a savoury potato and onion mix.
Method
Step 1 of 4
Fill a large pot with water and bring to the boil, add the potatoes and cook for 10-12 minutes until tender and drain well and place back into the pot. Mash until smooth. Heat the oil in a large pan on medium heat and cook the onions for 10-15 minutes until golden. tip the onions and oil into the potato mash and mix well.

Sift the flour into a large bowl, add the salt and pour in 175ml of cold water. Mix well with your hands to form a dough ball and divide into 2 pieces. Cover the piece not in use with a damp tea towel.

Tip the dough onto a floured work surface and knead for 2-3 minutes. Roll out to 1/4 inch thickness. Cut circles of dough with a cookie cutter or large glass and place spoonfuls of potato mix on one side of each circle. Fold over and seal the edges by pinching the sides together.
Step 4 of 4
Repeat with the remaining filling and dough. Bring a large pot of lightly salted water to the boil and cook the dumplings in batches for 3-4 minutes, until they float to the top of the water. Drain well and serve with sour cream.
