  • 450grams pkt Woolworths sliced potatoes*
  • 3 rosemary sprigs
  • 6 Woolworths free range eggs
  • 1 cup self-raising flour
  • 400grams zucchini, coarsely grated
  • 100grams sliced ham, chopped
  • 1 cup cheddar, grated
  • 1/4 cup vegetable oil
  • 200grams pkt Woolworths leafy mix

Looking for a new slice recipe? Try this tasty ham and zucchini slice topped with crispy, cheesy potato and rosemary. Enjoy leftovers at work the next day.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a 20 x 30cm roasting pan with baking paper, extending paper 2cm above edges. Unseal potato container and microwave on high for 2 minutes or until just tender.

Step 2 of 4

Finely chop half the rosemary. Whisk eggs in a large bowl. Whisk in flour until smooth. Add zucchini, ham, cheese, chopped rosemary and 2 1/2 tbs oil, then stir until combined. Pour zucchini mixture into pan and spread evenly.

Step 3 of 4

Arrange potato slices, slightly overlapping, over zucchini mixture. Remove leaves from remaining rosemary sprigs. Brush potato with remaining oil, scatter over rosemary and season with pepper. Bake for 40 minutes or until potato is tender and slice is cooked through.

Step 4 of 4

Slice and serve with leafy mix.
