Pork Mignons with Garlic Butter, Paprika Carrots & Crispy Potatoes

- 2tablespoons butter, melted (save 1 tbs to cook pork mignon)
- 2 bunch dutch carrots, washed and peeled
- 800grams potatoes
- 1teaspoons paprika
- 1/2 cup parmesan, grated
- 1 pinch pepper (for seasoning)
- 4 pork mignon with garlic butter
- 4 slice prosciutto
- 4 small bamboo skewers
- 1 pinch sea salt ground (to taste)
Method
Step 1 of 7
Wrap each mignon with a slice of prosciutto and secure with a bamboo skewer. Set aside. Place carrots in an ovenproof dish.

Combine butter and paprika in a bowl. Pour over carrots. Toss to combine.
Step 3 of 7
Bake for 30 minutes or until tender.
Step 4 of 7
Place potatoes in a saucepan of boiling water. Cook for 8-10 minutes or until soft.
Step 5 of 7
Place on a baking tray and press each potato with a potato masher. Sprinkle with salt and pepper and parmesan. Bake in a hot oven for 10-15 minutes or until crispy.

Heat extra butter and oil in a frying pan over medium heat. Cook pork for 4-6 minutes on each side.
Step 7 of 7
Serve with the vegetables.
