  • 750grams pork and veal mince
  • 2 eggs, whisked
  • 1tablespoons thyme
  • 1/3 cup pistachios
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 4

Preheat oven to 160°C. Heat 40g butter in a frying pan over medium heat. Add 1 finely chopped onion and cook for 10 minutes until soft. Add 2 crushed garlic cloves and 1 tbs thyme and cook for 2 minutes. Transfer to a bowl. Stir in 1/2 tsp ground allspice and season with salt and pepper.

Combine 750g pork and veal mince, 2 whisked eggs, 1/2 cup cream, 1/4 cup brandy (optional) and 1/3 cup pistachios in a large bowl. Add onion mixture. Mix until well combined and smooth.

Step 3 of 4

Line base and sides of a 6-cup loaf pan with 12 prosciutto slices, leaving ends to overhang. Fill with mince mixture. Fold ends of prosciutto over top to cover. Cover with baking paper and foil. Place pan into a large baking dish and fill sides halfway up with hot water.

Step 4 of 4

Bake for 2 hours. Remove from oven. Cool in pan for 30 minutes. Drain off juices. Chill overnight in refrigerator. To serve, turn out onto a board, slice and serve with crusty bread.
