- 2teaspoons extra virgin olive oil
- 300grams frozen pork & chive dumplings
- 1 red onion
- 2 Lebanese cucumbers
- 1 long red chilli
- 1/4 bunch coriander
- 150grams wombok
- 1/3 cup crispy noodle dressing
- 1/3 cup unsalted roasted cashews, chopped
Description
Succulent pork and chive dumplings tossed with wombok, cucumber, red onion, chilli and cashews makes for an easy yet satisfying weeknight meal. It's easy on the wallet, too.
Method
Step 1 of 4
Heat oil in a large frying pan over medium-high heat. Add dumplings in a single layer, then pour in 1/2 cup water. Cover with a tight-fitting lid. Cook for 5 minutes or until almost cooked. Uncover and cook for a further 2 minutes or until golden brown and water has evaporated.

Meanwhile, thinly slice onion, cucumber and chilli.

Pick coriander leaves. Shred wombok.
Step 4 of 4
Combine wombok, onion and cucumber in a large bowl. Add dressing and toss to combine. Spoon onto plates. Top with dumplings. Serve sprinkled with coriander leaves, chilli and cashews.
