  • 1tablespoons canola oil
  • 1 large red onion, peeled and chopped
  • 2 large capsicums, red and green, cored and chopped
  • 300grams vegan meatballs
  • 1teaspoons cumin
  • 2 cloves garlic, peeled and minced
  • 2tablespoons chipotle paste
  • 8 small tortilla wraps
  • 1 large avocado, peeled and sliced
  • 1 lime, chopped into wedges
  • 50grams vegan cheese, grated
  • 3tablespoons coriander, fresh, chopped

Description

Meatballs make the perfect quick and easy filling for vegan tacos with all the trimmings.

Method

Step 1 of 3

Heat half of the oil in a large pan on medium high heat and cook the meatballs, stirring often, for 5 minutes until browned all over. Add the onions and capsicums and cook for 6-7 minutes.

Step 2 of 3

Stir in the garlic, cumin and chipotle paste and cook for 1 minute. Heat the tortillas according to pack instructions.

Step 3 of 3

Serve with sliced avocado, vegan cheese, chopped coriander and lime wedges on the side.
