  • 2tablespoons peri peri seasoning
  • 2 medium mango, peeled and diced
  • 1tablespoons lime juice
  • 2 small red / green chilli, finely chopped
  • 2 medium avocado, peeled and sliced
  • 2tablespoons sesame oil
  • 1 small red onion, peeled and finely diced

Description

This chicken recipe brings the heat but is tempered by the sweetness of the dressing.

Method

Step 1 of 2

Combine the butterflied chicken with the olive oil and peri peri seasoning and allow to marinate for 2 hours in the fridge. Combine the chopped mango, chilli, lime juice, sesame oil and red onion in a bowl and set to one side.

Step 2 of 2

Chargrill the marinated chicken breasts on a medium heat for 6 minutes on each side or until cooked though. Remove from the heat and serve with the mango dressing and garnish with slices of avocado.
