  • 1 medium fennel bulb, trimmed, halved
  • 1 firm pear, cored, quartered
  • 1 red apple, cored quartered
  • 1teaspoons honey
  • 2tablespoons lemon juice
  • 1tablespoons tahini
  • 40grams parmesan, shaved
  • 100grams baby spinach leaves
  • 2tablespoons olive oil

Method

Step 1 of 2

Whisk oil, lemon juice, tahini and honey in a large bowl. Season with salt and pepper.

Step 2 of 2

Thinly slice fennel, pear and apple, using a mandolin or sharp knife. Add to the dressing and gently toss to combine. Add baby spinach and parmesan and pile onto a serving platter. Serve.
