  • 500grams frozen mixed berries
  • 1/4 cup caster sugar
  • 1 star anise
  • 1 stick cinnamon
  • 600milliliter thickened cream
  • 6 yellow peaches, stones removed, cut into wedges
  • 250grams raspberries
  • 12 Woolworths cinnamon doughnuts, broken into pieces
  • 800grams thick custard

Description

Branch out from your classic go-to trifle with this next-level recipe. The towering treat features layers of thick, creamy custard, whipped cream, raspberries, peaches and cinnamon doughnuts, all drizzled in a spiced berry syrup.

The cinnamon doughnuts add a sugar and spice flavour, but you can swap them with chopped sponge or mud cake.

Method

Step 1 of 5

To make spiced berry syrup, place frozen mixed berries, sugar, star anise and cinnamon stick in a large saucepan over medium-high heat. Cook, stirring occasionally, for 5 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to medium-low. Simmer for 10 minutes or until the mixture is syrupy. Remove from heat.

Strain berry mixture through a fine sieve over a jug, reserving berry mixture and syrup in separate bowls. Remove and discard cinnamon stick and star anise. Set aside to cool completely.

Step 3 of 5

Using an electric stand mixer, beat cream until just-firm peaks form.

Step 4 of 5

Alternating as you go, arrange peaches, raspberries, doughnuts and dollops of custard, whipped cream and berry mixture into a 3L (12-cup-capacity) serving bowl.

Step 5 of 5

Drizzle with berry syrup. Serve.
