  • 1kilograms frozen mixed berries, partially thawed
  • 1/4 cup cornflour
  • 1 cup dry red wine
  • 2/3 cup caster sugar
  • 1teaspoons mixed spice
  • 1 orange, zested, juiced
  • 1 1/2 cups self-raising flour
  • 80grams unsalted butter, chilled, chopped
  • 1 cup flaked almonds
  • 1/2 punnet rosemary, leaves picked, roughly chopped
  • 1 3/4 cup Woolworths thickened cream, whipped (save1 cup, to serve)

Description

Our mulled wine berry-packed cobbler is the perfect winter warming dessert ideal for cosy nights in with family and friends. 

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced.

Step 2 of 4

Place berries and cornflour in a large bowl and toss gently to coat. Stir in wine, 1/2 cup sugar, mixed spice, zest and orange juice. Transfer to an 8-cup capacity ovenproof rectangular dish. Bake for 30 minutes or until sauce bubbles and has thickened slightly.

Meanwhile, place flour and remaining sugar in a medium bowl. Rub butter into flour mixture until it resembles fine breadcrumbs. Stir in 3/4 cup almonds and rosemary. Gradually stir in cream until a soft, sticky dough forms.

Step 4 of 4

Dollop spoonfuls of dough over berry mixture. Scatter with remaining almonds. Bake for 30 minutes or until top is golden and puffed. Serve with extra cream.
