  • 300grams kent pumpkin, cut into wedges
  • 4 parsnip, peeled, halved
  • 250grams broccoli, roughly chopped
  • 2 zucchini, roughly chopped
  • 300grams sweet potato, roughly chopped
  • 1tablespoons mixed white and black sesame seeds

Description

Take your tastebuds on a global trip when you combine stunning winter produce with international flavours. Try this super simple veg-packed traybake this winter.

Method

Step 1 of 4

Preheat oven to 200C/180C fan-forced. Grease and line a large roasting pan with baking paper. Whisk water, oil and paste in a jug.

Step 2 of 4

Place pumpkin, parsnip sweet potato and broccoli in pan. Drizzle with some oil. Drizzle with half the miso dressing. Roast for 20 minutes.

Step 3 of 4

Add zucchini to pan and drizzle with a little oil. Sprinkle with half of the sesame seeds. Roast for a further 10-15 minutes or until vegetables are tender. Season.

Step 4 of 4

Drizzle with remaining miso dressing. Serve sprinkled with remaining sesame seeds.
