Mini Pappadums with Indian Chicken

- 2tablespoons mango chutney
- 1tablespoons milk
- 1tablespoons curry paste
- 3 sprigs coriander (to serve)
- 2tablespoons mint leaves (to serve)
- 100grams mini pappadums
- 1/2 roast chicken
- 1/3 cup aioli
Method
Step 1 of 3
Remove meat from chicken. Discard skin and bones. Shred meat (you will need about 3 cups). Combine aioli, curry paste and milk in a bowl. Add chicken and toss to combine.

Cook pappadums, in batches, in the microwave on HIGH (100%) for 30 seconds or until puffed and crisp.
Step 3 of 3
Transfer to a platter and top each with 1tbs chicken mixture. Garnish with mango chutney and herbs. Serve. Save time: Prepare the chicken filling and pappadums in advance. Store each in airtight containers. Place chicken in the fridge and pappadums in the pantry. On the day, assemble from step 3.
