  • 2 potatoes, peeled, cubed
  • 75grams salted peanuts
  • 3 cup jasmine rice (to serve)
  • 750grams rump, cut into 2.5cm cubes
  • 880milliliter coconut milk

Method

Step 1 of 3

Heat wok over medium-high heat. Add curry paste and stir until it becomes oily. Add diced beef and stir to combine. Cook for 5 minutes or until well browned.

Step 2 of 3

Stir in coconut milk and bring to the boil. Cover and cook, stirring occasionally, for about 1 hour, until beef is tender.

Step 3 of 3

Add onion, potato and sweet potato and cook for 30 minutes or until vegetables are tender. Add beans and sugar. Season with fish sauce. Cook for 5 minutes or until beans are just cooked. Divide among serving bowls. Top with peanuts and coriander.
