- 30grams pistachios, shelled and finely chopped

Description
Malpua is a sticky and sweet Indian pancake-style treat often enjoyed at holi.
Method
Step 1 of 4
Mix the flour and cardamom powder in a jug. Gradually whisk in the milk to make a smooth batter. Set aside.
Step 2 of 4
Place the sugar in a large saucepan and add 100ml of water, bring to the boil and cook for 1 minute until it is syrup consistency. Allow the syrup to cool slightly, then scoop half a teaspoon out and test between your forefinger and thumb. If it pulls into 1cm strands then it is the right consistency.
Step 3 of 4
Place the syrup in a bowl, stir in the saffron and set aside. Heat the oil in a large, wide saucepan to 180°C. Drop in pancake size dollops of batter and cook for 1-2 minutes, flip and cook until golden. Repeat with the remaining batter to make 12 pancakes.
Step 4 of 4
Remove the malpua from the oil and dip each in sugar syrup, leaving to soak for 20 seconds on each side. Remove from the syrup, sprinkle with flaked almonds and pistachios and serve warm.
