  • 1.25kilograms Woolworths rocky road mudcakes
  • 800grams chocolate frosting, chilled
  • 200grams block dark cooking chocolate, roughly chopped
  • 1 cup thickened cream
  • 190grams Woolworths rocky road mallow biscuits, halved
  • 1/4 cup mini marshmallows
  • 1tablespoons unsalted peanuts, roughly chopped
  • 125grams raspberries

Description

Turn heads with this spectacular mud cake. This easy recipe layers two of our rocky road mudcakes with chocolate frosting and crunchy, gooey toppings.

Method

Step 1 of 6

Place cakes, icing-sides up, on a large plate or board.

Step 2 of 6

Spoon 3/4 cup frosting onto top of one cake and, using a spatula, evenly spread to cover top. Sandwich with remaining cake, icing-side down, gently pushing down to level cake.

Step 3 of 6

Spread top and side of cake with remaining frosting to cover. Refrigerate for 10 minutes to chill.

Step 4 of 6

Meanwhile, place chocolate and cream in a medium microwave-safe bowl. Microwave on high for 1 minute, stirring halfway through with a metal spoon,or until melted and smooth. Set aside for 5 minutes to thicken slightly.

Step 5 of 6

Carefully spoon chocolate mixture over top of cake and allow to drip down side of cake. Refrigerate for 5 minutes or until almost set.

Step 6 of 6

Decorate top of cake with biscuits, marshmallows, peanuts and half of the raspberries. Serve with remaining raspberries.
