Description
Everybody loves a classic dessert, simply crank up the oven, zest the limes and bake a little love into everyone's heart with this surprisingly easy winter treat.
Method
Step 1 of 4
Preheat oven to 180C/160C fan-forced. Grease a 1.5 litre rectangular ovenproof baking dish. Using an electric mixer, beat butter and sugar in a large bowl until pale and creamy. Add the egg yolks, milk, flour, lime juice and half of the zest. Beat until well combined.
Step 2 of 4
Using clean beaters and an electric mixer, whisk egg whites in a large, dry clean bowl until soft peaks form. Fold egg whites into butter mixture until just combined. Pour into prepared dish. Place in a large roasting pan. Pour enough boiling water into roasting pan to come half way up side of dish. Bake for 35 minutes or until pudding springs back when lightly touched. Remove from oven. Remove pudding from roasting pan.

Meanwhile, using a mortar and pestle pound remaining zest and coconut until combined and fragrant.

Serve Lime Delicious sprinkled with crushed lime mixture.
