- 1 brown onion, finely chopped
- 1 clove garlic, finely chopped
- 1 broccoli, finely chopped
- 1 cup salt-reduced chicken stock
- 2 cups milk
- 60grams baby spinach leaves
- 250grams spaghetti
- 1/2 lemon, rind finely grated, juiced
- 2 sprigs continental parsley, leaves picked
- 80grams shaved parmesan (to serve)

Description
Satisfy hungry tummies with this simple, easy, kid-friendly green spaghetti and cheese recipe.
Method
Step 1 of 5
Heat oil in a medium saucepan over medium heat. Add onion and garlic and cook for 5 minutes, stirring, or until softened. Add broccoli, stock and milk. Simmer, uncovered, for 10 minutes or until liquid has reduced by half.
Step 2 of 5
Transfer broccoli mixture and spinach to a blender. Blitz until smooth. Set aside.
Step 3 of 5
Meanwhile, cook spaghetti according to packet instructions. Drain pasta, reserving ¼ cup cooking liquid. Return pasta and liquid to saucepan.
Step 4 of 5
Add broccoli mixture to saucepan. Add lemon juice and stir until combined.
Step 5 of 5
Serve spaghetti topped with cracked pepper, lemon rind, parsley and parmesan.
