- 2 rasher middle bacon, finely chopped
- 1/4 cup mint leaves, roughly chopped
- 1/3 cup light sour cream (standard sour cream can be used)
- 4 medium brushed potatoes

Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Wrap each potato in foil and place on a baking tray. Bake for 45 minutes or until golden and tender. Set aside for 5 minutes to cool slightly.
Step 2 of 3
Cook bacon in a frying pan over medium-high heat for 4-5 minutes, stirring, until crisp. Transfer bacon to a bowl. Add mint and sour cream. Stir until well combined.
Step 3 of 3
Remove potatoes from foil. Cut a cross on top of each one. Squeeze potato up from the base so that the inside is exposed. Spoon a dollop of bacon mixture on top and serve.
