  • 500grams pkt Italian-style fennel pork sausages
  • 500grams pkt Woolworths garlic & rosemary roast mixed vegetables
  • 2tablespoons extra virgin olive oil
  • 400grams can no-added-salt diced tomatoes
  • 1/2 cup pitted mixed olives
  • 1/3 bunch basil, leaves picked
  • 1/2 520g loaf sourdough bread, sliced

Description

This hearty, filling, tasty Italian-style sausage bake makes an easy weeknight dinner. Thrown together in one dish, it means less time cleaning up later. It's a win-win.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Lightly grease a 1.5L baking dish. Add sausages and vegetables to dish, then drizzle with 1 tbs oil. Bake for 30 minutes or until sausages are browned.

Step 2 of 4

Add tomatoes and olives to dish and toss to combine. Bake for a further 15 minutes or until sausages are cooked and vegetables are tender.

Step 3 of 4

Meanwhile, preheat a chargrill pan over medium-high heat. Brush bread with remaining oil. Grill for 2 minutes each side or until browned.

Step 4 of 4

Remove sausages from oven. Sprinkle sausages with basil. Serve with grilled bread.
