  • 1 large cauliflower
  • 2 limes
  • 1/4 cup chipotle-in-adobo sauce
  • 320grams Mix-a-Mato® tomatoes, sliced
  • 1 red onion, finely chopped
  • 1/4 cup coriander leaves
  • 1 jalapeno, sliced
  • 100grams Macro Organic original corn chips
  • 420grams no-added-salt black beans, drained
  • 1 cup no-fat Greek-style yoghurt
  • 1 1/2 cups shredded light tasty cheese
  • 1/2 avocado, sliced

Description

Make Mexican night healthier with this nutritionally approved vegetable nachos recipe. Made with corn chips, beans, veggies and cheese, this comfort meal is tasty and nourishing.

Method

Step 1 of 4

Preheat oven to 240°C/220°C fan-forced. Line a large baking tray with baking paper. Cut cauliflower into florets. Toss cauliflower with oil and sauce in a bowl. Transfer to tray and bake for 30 minutes or until charred and tender. Remove tray from oven.

Step 2 of 4

Meanwhile, juice 1 lime. Slice tomatoes and place in a large bowl. Add onion, coriander, jalapeño and lime juice and stir to combine.

Step 3 of 4

Preheat an oven grill on high. Add corn chips to cauliflower mixture. Scatter beans and cheese over cauliflower and chips. Grill for 2 minutes or until the cheese is melted and golden.

Step 4 of 4

Cut remaining lime into wedges. Top nachos with yoghurt, salsa and avocado. Serve with lime wedges.
