- 250grams Macro free range pork medallion
- 1teaspoons MasterFoods harissa Middle Eastern spice blend
- 5milliliter Woolworths extra virgin olive oil cooking spray
- 350grams Woolworths kaleslaw kit
- 1 Macro Organic avocado, flesh thinly sliced
- 1 mango, flesh thinly sliced
Description
Served with a refreshing mango slaw, this easy harrisa-spiced pork dish delivers a tantalising fusion of flavours in every bite.
Method
Step 1 of 3
Sprinkle both sides of pork with spice. Spray a large frying pan with oil. Heat over medium heat. Add pork and cook for 2-3 minutes each side for medium or until cooked to your liking. Set aside for 3 minutes to rest.
Step 2 of 3
Place slaw mixture in a large bowl, reserving seed and dressing sachets. Add avocado and mango. Season and toss gently to combine. Divide among serving plates.
Step 3 of 3
Thinly slice pork. Arrange on salad. Drizzle with dressing. Sprinkle with seed, coconut and cranberry mix. Serve immediately.
