Description

This frittata recipe is perfect for family dinners or make-ahead lunches. Packed with ham, cheese and colourful veggies, this frittata ticks all the boxes.

Method

Step 1 of 4

Preheat oven to 185℃/165℃ fan-forced.

Step 2 of 4

Place eggs, cream, cheese, paprika, salt and pepper in a large bowl. Whisk until well combined.

Step 3 of 4

Melt butter in a large ovenproof frying pan over medium heat. Add sweet potato and cook, stirring, for 5 minutes or until softened. Add ham, spinach and tomato, and cook, stirring, for 2 minutes or until spinach starts to wilt. Remove pan from heat.

Step 4 of 4

Pour egg mixture into pan, then gently move vegetables to distribute egg mixture evenly. Transfer pan to oven and bake for 30 minutes or until frittata is just set. Cool for 5 minutes. Serve scattered with basil.
