- 225grams Mission gluten-free wraps (warmed)
- 1/2 red onion (thinly sliced)
- 1/2 cup continental parsley leaves (finely chopped)
- 300grams chicken breast fillet
- 1 cos lettuce (roughly chopped)
- 1/4 cup gluten-free Red Kellys caesar salad dressing
- 2 eggs

Method
Step 1 of 3
Place a saucepan of salted water over high heat and bring to the boil. Add chicken, reduce heat to low and simmer for 12 minutes or until cooked through. Using tongs, transfer to a plate. Set aside to cool for 10 minutes before shredding.

Meanwhile, bring a small saucepan of water to the boil over medium-high heat. Gently add eggs to boiling water and simmer for 71/2 minutes. Using a slotted spoon, transfer eggs to a bowl of iced water to cool. Peel and slice.
Step 3 of 3
Combine shredded chicken, lettuce, parmesan, parsley and onion in a large bowl. Divide mixture among gluten-free wraps. Season, then top with egg and drizzle with gluten-free dressing. Roll up to enclose filling and serve.
