- 1/2 loaf sourdough bread, torn
- 1 brown onion, finely chopped
- 3 cloves garlic, finely chopped
- 50grams sachet tomato paste
- 2/3 cup thickened cream
- 500grams frozen peeled prawns, tails intact
- 1/4 bunch continental parsley, leaves picked
- 1 long green chilli, sliced
- 1 lemon, zested

Description
Juicy prawns cooked in a creamy garlicky sauce and served with golden sourdough croutons – what's not to love? This classic dish will never go out of style.
Method
Step 1 of 4
To make croutons, heat half of the oil in a large frying pan over medium-high heat. Add bread and cook, turning occasionally, for 2-3 minutes or until golden brown. Transfer to a plate.
Step 2 of 4
Add remaining oil to pan. Add onion and garlic and cook, stirring occasionally, for 3 minutes or until softened. Add paste and cook, stirring, for 1 minute or until fragrant.
Step 3 of 4
Stir in the cream and bring to the boil over high heat. Reduce heat and simmer for 2 minutes or until sauce has thickened slightly. Season with pepper.
Step 4 of 4
Add prawns and cook, stirring occasionally, for 4 minutes or until prawns change colour and curl. Remove from heat. Toss prawns with croutons. Serve sprinkled with parsley, chilli and lemon zest.
