  • 25grams unsalted butter
  • 200grams dark chocolate, chopped (save 100g dark chocolate, melted, cooled)
  • 200grams dark chocolate, chopped (extra)
  • 150grams dark chocolate, roughly chopped (for chocolate glaze)
  • 100milliliter pure cream
  • 1/2 cup cocoa
  • 1 2/3 cups almond meal
  • 5 eggs, lightly beaten
  • 2tablespoons brown sugar
  • 1 cup raw caster sugar

Method

Step 1 of 4

Preheat oven to 160°C. Grease a 20x30cm lamington pan and line with baking paper.

Step 2 of 4

Combine butter, beaten egg, chopped chocolate, melted chocolate, almond meal, sugar, cocoa and 1/2 tsp salt in a bowl. Spread half the batter into prepared pan, then press in the extra chocolate. Cover with remaining batter and smooth using a spatula.

Step 3 of 4

Bake for 45 minutes or until the top is beginning to crack and a skewer inserted into the centre comes out with a few crumbs. Cool.

Step 4 of 4

For the chocolate glaze, place 100ml pure cream, 150g dark chocolate, brown sugar and unsalted butter in a saucepan over low heat. Stir occasionally, until chocolate has melted and the glaze is smooth and glossy. Drizzle over brownies and serve.
