  • 2 cups plain flour
  • 3teaspoons baking powder
  • 2tablespoons milk
  • 100grams fresh figs, chopped
  • 6 medium fresh figs (for top decorating)
  • 2tablespoons raw sugar (for sprinkling)
  • 2 large eggs
  • 3/4 cup raw sugar
  • 200grams WW full cream ricotta
  • 1/4 cup vegetable oil
  • 1teaspoons vanilla extract
  • 1/2teaspoons lemon, zested
  • 1/4teaspoons salt

Description

With plenty of home grown figs I've created a delicious moist cake using Ricotta with a crusty top. Enjoy with a cuppa or as a dessert with custard or cream.

Method

Step 1 of 9

Grease a 9" round springform cake tin. Cut stems off figs and quarter them lengthwise. Chop 100g figs. Set both aside.

Step 2 of 9

Gather and measure all ingredients. Sift plain flour and baking powder together into a bowl and then return to your sifter. Preheat oven to 170 degrees fan

In a large mixing bowl add the eggs to the sugar and beat together with electric beater for approx 3 minutes until light and fluffy

Add ricotta, oil, vanilla, lemon zest and salt and beat together to combine well.

Step 5 of 9

Sift in the flour and fold together until just combined with a spatula. This mixture is stiff. That's OK. Now add the milk and chopped figs, fold together and turn into the greased cake tin. Level it out. Arrange figs on top and sprinkle with raw sugar

Step 6 of 9

Place in preheated oven for 60 minutes. Test with skewer before removing. Place on a wire rack and cool in the tin for 20 minutes.

Remove spring form ring from cake to uncover golden crusty sides to the cake.

When cooled cut the cake
