  • 2kilograms roast chicken with apple and walnut stuffing
  • 2kilograms potatoes
  • 1 pinch pepper (sprinkle)
  • 2tablespoons olive oil
  • 1 pinch pink salt ground (to taste)

Description

Impress everyone around the dinner table with this succulent roast chicken served with crispy, golden hasselback potatoes.

Method

Step 1 of 4

Preheat oven to 180°C. Remove chicken from packaging and place in a baking dish. Calculate cooking time, allowing 25 minutes per 500g (a 2.5kg chicken will take 2 hours 5 minutes). Cook as per packet instructions.

Step 2 of 4

Meanwhile, peel potatoes and halve. Steam for 5 minutes until the surface is tender but not cooked through. Remove from pan and place on a chopping board. Scrape surface of potatoes with a fork or make cuts with a sharp knife but not right through. Place into a baking dish with oil. Toss to coat. Sprinkle with salt and pepper.

Roast with chicken for last 30 minutes of cooking time.

When chicken is cooked remove from oven and set aside covered with foil for 10 minutes. Increase oven temperature to 200°C and continue to cook potatoes until crisp, golden and tender.
