  • 1kilograms chicken thighs or breasts
  • 2tablespoons oil divided
  • 1 onion, diced
  • 4 clove garlic, minced or chopped fine
  • 1 chilli, finely diced
  • 1 can 425g refried beans
  • 3tablespoons coriander, stalks chopped
  • 2teaspoons sugar
  • 1/4teaspoons cayenne
  • 1teaspoons salt (to taste)
  • 1teaspoons pepper
  • 1 can 420g kidney beans, drained
  • 1 can 420g corn kernels, drained
  • 1 bottle 680g passata
  • 200grams cheese grated
  • 1tablespoons oregano dried

A great dish for entertaining or for a family dinner together.

Method

Step 1 of 13

Set oven to 180 FF. In a small bowl mix together your cumin, coriander & smoked paprika.

Trim excess fat off your chicken thighs. If using chicken breast, no need to do this step. Brush your chicken with 1 tablespoon of oil, then sprinkle on half the spice mix and a little salt.

Heat your grill pan until very hot. You can do this in a regular frypan. Seal your chicken for a couple of minutes each side.

Place your chicken pieces in an ovenproof dish and bake for ten minutes. For chicken breasts it will be seven minutes.

Cut your chicken to the desired size which will be added to your enchilada sauce.

Add the remaining one tablespoon of oil in a heavy bottom pot. Sauté your onions for a couple of minutes. Add your garlic and chilli and sauté for a minute or two.

Add the remaining spices and sauté over medium heat being careful not to burn them.

Add refried beans and let it simmer for a couple of minutes.

Add your passata, chopped coriander stalks, your cooked chicken, oregano, cayenne, sugar, salt and pepper to taste. Simmer for 15 minutes.

Add the beans and corn to warm through.

Allow the mixture to cool slightly. Brush an oven proof dish with oil. Place around four tablespoons of mixture along the centre of the wraps. Grate cheese to your liking and fold seam side down.

Spread a small amount of filling on top of wraps and add grated cheese. Bake in a preheated 220 oven until the cheese is bubbling and golden brown.
Instruction tip

Tip: Serve with a side of Guacamole, sour cream and pico de gallo salad.
