- 250grams long-life noodles
- 2tablespoons vegetable oil
- 400grams beef oyster steak, fat trimmed, thinly sliced
- 1 piece fresh ginger, 4cm, finely grated
- 250grams frozen stir-fry vegetables
- 100grams Cantonese beef stir-fry sauce sachet
- 1/3 cup almonds
- 1/4 bunch coriander, sprigs picked
- 2 spring onions, thinly sliced diagonally
Description
Use frozen stir-fry vegetables to make this speedy dinner option. It's packed with ginger, beef, almonds and fresh greens for a tasty bowl of yum.

Swap tip:Adding nuts to stir-fries adds a nice crunch. Swap almonds for cashews, or try seeds – such as pepitas or sunflower seeds – for a nut-free option.
Method
Step 1 of 4
Prepare noodles according to packet instructions. Set aside.
Step 2 of 4
Meanwhile, heat 1 tbs vegetable oil in a wok or large frying pan over high heat. Stir-fry beef, in two batches, for 2 minutes or until browned. Add ginger and stir-fry for a further 30 seconds or until fragrant. Set aside.
Step 3 of 4
In the same wok, heat remaining vegetable oil over high heat. Stir-fry vegetables for 4 minutes or until soft. Add sauce, noodles and 1/2 cup water and stir-fry for 2-3 minutes or until heated through.
Step 4 of 4
Add beef and almonds and stir-fry for 1 minute or until heated through. Serve topped with coriander and spring onion.
