  • 2 cup plain flour
  • 2 cup fruit (to serve)
  • 5milliliter extra virgin olive oil spray
  • 2tablespoons maple syrup
  • 1 cup light Greek-style yoghurt (to serve)
  • 2 free range eggs
  • 2-4 drops brown and pink natural food colouring
  • 500milliliter light milk

Method

Step 1 of 3

Place flour, milk, syrup and eggs in a food processor and process until smooth.

Step 2 of 3

Divide batter evenly among three bowls. Add a few drops of brown food colour to one bowl, a few drops of pink food colour to another, leaving one bowl of batter uncoloured. Transfer each batter mixture into three separate sauce bottles or snap-lock bags with the corners snipped.

Lightly spray a non-stick crepe pan or frying pan with oil and heat over very low heat. Using brown coloured batter, pipe the bunny face outline onto surface of pan, then pipe two dots for eyes. Leave for 10 seconds to set. Using pink coloured batter, highlight ears and nose. Leave for 10 seconds to set. Using plain coloured batter, fill in face. Leave for 10 seconds to set, then flip over and cook for 20 seconds to seal. Repeat with remaining batters to make 8 in total. Serve bunny pancakes with fruit and yoghurt.
