  • 6 skin-on salmon fillets
  • 2tablespoons extra virgin olive oil
  • 1/3 cup lemon & herb dukkah with almonds
  • 50grams unsalted butter, softened
  • 1 clove garlic, crushed
  • 1 lemon, zested, cut into wedges
  • 200grams green beans, trimmed
  • 200grams snow peas, trimmed
  • 1 bunch broccolini, trimmed

Description

Full of flavour, dukkah-crusted salmon fillets served with greens tossed in lemon butter makes an easy summer dinner.

Method

Step 1 of 4

Place salmon on a plate and rub with oil. Coat the top side of each fillet with dukkah.

Step 2 of 4

Heat a greased barbecue plate on medium heat. Cook salmon for 3 minutes on each side or until cooked to your liking. Transfer to a large plate. Cover to keep warm.

Step 3 of 4

Meanwhile, combine butter, garlic and lemon zest in a small bowl. Season with pepper.

Step 4 of 4

Add greens to the barbecue plate. Cook, turning occasionally, for 3-4 minutes or until bright green and tender. Place greens in a serving pan and dollop with butter mixture. Arrange salmon on top. Serve with lemon wedges.
